For our head chef Michael Eigl, and his sous-chef Mathias Crotat, quality begins with selecting the finest ingredients and this is evident in every single step of the process. That’s why so much of what we serve is truly handmade: Everything that leaves our kitchen is prepared with care and passion. From our house-cured salmon to our handmade ravioli, every detail matters.
